Peru has been known for over a century as a coffee-producing country, but until 1970 the coffee was used primarily for domestic consumption. From 1970s Peru has developed as an exporting country, becoming one of the 20 top coffee producers in the world.
It’s a blend of 3 different varieties of coffee: Pache, a dwarf form of typica, Caturra, which is a bourbon, and Geisha.
Cherries are picked, sorted and pulped before moving to fermentation tanks and then dried on trays in solar parabolic dryers. The beans are then sorted according to size, quality and taste, before being prepared for export.
